Balthazar conducts weekly interviews for waiters and staff. Hiring takes place  at the following times: Balthazar at 4pm on Thursdays; Pastis at 9:30 am on Thursdays; Morandi at 10:00 am on Wednesdays; and Schiller's Liquor Bar at 4pm on Wednesdays.
